When it comes to preserving the crunch and natural aroma of nuts, how you store them matters just as much as how you buy them. Heat, light, air and moisture can alter a product's texture and flavour over time. With a few simple habits, you can make better use of an open packet and cut down on unnecessary waste.
Keep them away from the four main culprits
The ideal environment for nuts is cool, dry, dark and free from odours. Next to the hob, on a windowsill or on kitchen shelves exposed to steam are not suitable places. Leaving the product in direct sunlight can cause the temperature to fluctuate, while keeping it in an open container can allow moisture and odours in the air to pass into it.
What makes a good storage container?
Choose containers that are clean, completely dry and limit the flow of air. Glass jars make it easy to see the contents, and food-safe boxes with lids are also convenient for everyday use. Before adding new product, make sure no crumbs or oil from the previous batch remain in the container. Rather than mixing old and new product in the same container, it is better stock management to finish what is left first.
Larder, fridge or freezer?
Small packets that will be eaten soon can be kept in a cool, dry kitchen cupboard. If the room is very warm or the product will be kept for a long time, the fridge may be an option, provided the instructions on the packaging allow it. Product stored in the cold must always be in an airtight container; otherwise it may absorb odours and moisture from the fridge. Before eating, take out only the amount you will use, so that the container is not repeatedly warmed and chilled.
Keep different products apart
Salted, spiced, sugar-coated and natural products differ in their moisture and aroma profiles, so they should be stored in separate containers. Dried fruit, with its higher moisture content, should likewise not be kept in the same container as crunchy nuts for long periods. If you are putting together a mix, combine only the amount you will eat soon, just before serving.
Freshness checklist
- Is the smell clean and characteristic of the product?
- Is the texture as crunchy as you would expect?
- Is there any moisture, condensation or foreign matter in the container?
- Can you taste any unusual bitterness or a heavy, oily flavour?
- Are the date on the packaging and the storage instructions still being met?
Buy only as much as you need
The most effective storage method is to buy a quantity that matches how quickly you get through it. A large packet may look economical, but if it is going to sit open for a long time it can lose its freshness advantage. It makes better sense to keep an eye on your weekly consumption for home, office or entertaining and choose the pack size accordingly.
Storing nuts in a suitable container, in the right place and with different product types kept apart is not complicated. Checking smell and appearance regularly, following the producer's advice on the label and closing the container after every use are the basic routine that keeps them fresh.
